Pumpkin Seed Crusted Tofu Stir-Fry:
Ingredients:
- 14 oz extra-firm tofu, pressed and cubed
- 1/2 cup pumpkin seed powder
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon maple syrup
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- Assorted vegetables (bell peppers, broccoli, snap peas, carrots)
- Cooked rice or noodles, for serving
Instructions:
- In a bowl, whisk together soy sauce, sesame oil, maple syrup, garlic, and ginger.
- Toss tofu cubes in the marinade and let sit for 15-20 minutes.
- Place pumpkin seed powder in a shallow dish. Coat each tofu cube in the pumpkin seed powder, pressing gently to adhere.
- Heat a skillet over medium heat and add tofu cubes. Cook until golden and crispy on all sides.
- In the same skillet, stir-fry assorted vegetables until tender-crisp.
- Serve the pumpkin seed crusted tofu over cooked rice or noodles, topped with the stir-fried vegetables.
