Pumpkin Seed Crusted Tofu Stir-Fry

Pumpkin Seed Crusted Tofu Stir-Fry:

 

Ingredients:

  • 14 oz extra-firm tofu, pressed and cubed
  • 1/2 cup pumpkin seed powder
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon maple syrup
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • Assorted vegetables (bell peppers, broccoli, snap peas, carrots)
  • Cooked rice or noodles, for serving

Instructions:

  • In a bowl, whisk together soy sauce, sesame oil, maple syrup, garlic, and ginger.
  • Toss tofu cubes in the marinade and let sit for 15-20 minutes.
  • Place pumpkin seed powder in a shallow dish. Coat each tofu cube in the pumpkin seed powder, pressing gently to adhere.
  • Heat a skillet over medium heat and add tofu cubes. Cook until golden and crispy on all sides.
  • In the same skillet, stir-fry assorted vegetables until tender-crisp.
  • Serve the pumpkin seed crusted tofu over cooked rice or noodles, topped with the stir-fried vegetables.
